Description

The Nobletree Farms Group acquired Fazenda Santa Izabel in 2012 from previous owner Marco Suplicy. Since then, the group has sought to expand its areas of specialty coffees, in a sustainable manner through the work of its employees, who are responsible for the rise of the enterprise.

Some important awards: 

  • 2017: Cup of Excellence International Phase – 23rd place; 
  • 2017: Aroma BSCA – 2nd place;
  • 2018: Cup of Excellence National Phase; 
  • BSCA 25 years: 1st place.

Harvesting of the lot selected for this competition was done by hand, seeking the maximum possible amount of ripe cherries. The beans underwent anaerobic fermentation and then dried in the dry method until reaching the ideal humidity for warehousing. After resting in the granary, the coffee was processed. The process was rigorously monitored by the post-harvest team. 

 

 

The post-harvest system is made up of a well-structured team divided in sectors: (tractor drivers, wet method, dry method, processing and grading), in which each worker is responsible for one step in the process. They are all well-trained and aggregate value to the coffees. 

The farm processes coffees into micro-lots divided into 6 processes: Pulped Natural 1, Pulped Natural 2, De-Pulped Under Ripe, Under Ripe, Tree-Dried and Floater. All lots are differentiated by variety, processing, elevation and plot in order to maintain all of the products quality potential.  

Some lots undergo different fermentation processes, including both pulped natural and natural coffees, with the goal of aggregating quality, having better results and offering a differentiated product in the farm’s portfolio.
