Cup of Excellence
Activities at Sítio São Sebastião began in the mid 90s with Merce’s father. Around two hectares of coffee were planted on the farm. Twenty years after this, the property passed to Merce’s administration. He made improvements in the fields through pruning and irrigation, seeking to achieve quality in the coffees produced.
Nowadays, at only 28 years of age, he is the current owner of the farm and is part of the family’s second generation of coffee growers. Having inherited the lands from his father, the youth takes care of the entire production cycle, from fertilization to warehousing, administering and also working on the drying patios and with pulping.
All this work is done with the help of his family and has become the family’s main source of income.
His wife, mother and sister participate very much in the work on the farm; they are responsible for verifying the lots harvested, financial and promotional activities.
The harvest is selective and the processing is pulped natural.
After being harvested, the coffee is pulped. Next the beans dry on the patio. Drying ends when the beans reach a humidity of around 11.5%. After this process is finished, the coffee rests to homogenize, and then it is processed. Following processing, beans of screen size 16 up are passed through densimetric and electronic sorting equipment to remove light and defective beans.
This is one of the most critical points for those who wish to produce specialty coffees, must care and love is necessary. The producer believes that specialty coffee is only produced with excellence if it’s done with love.
All of the producer’s hard work has resulted in several awards for Sítio São Sebastião.
During the last 5 years running, the farm has been classified in Cup of Excellence – Brazil.
