Cup of Excellence
Well, a brief history, the Canales family have been coffee producers since 1957, which was when my grandfather Pío Canales planted his first plot, then my father began to expand the cultivation in the 70s to date from 2004 when my father won the 1st place in the Excellence rate was when it gave us the impulse and enthusiasm to further improve quality and thanks to two roasting companies from the USA that over the years given training seminars, exchanges of experiences with different producers from many countries, they have always been interested in the subject. of the quality of the coffee and it has been something that we have done with great passion and dedication for many years
The winning plot of the GEISHA variety is located in La Patasta community in Pueblo Nuevo, municipality of the department of Estelí. At a height of 1700 meters above sea level. The farm “Auxilio Mundial” is a new project that we have been working on for 4 years, planting only varieties with very good potential for quality, we have Geisha, Bourbon 300 and Parainema, so far it is that plot.
I have always taken into account something as my grandfather used to say, nature is wise and gives the best but if we do not know how to handle it at some stage of the process, whether it is benefited wet or dry or harvesting, quality can be lost, that is why we try to monitor all of them. The processes until we deliver it to the exporter Prodecoop so that they very responsibly, through strict quality control, pack it and export it to different destinations
