Description

Climatology: altitude 1400 to 1700 msnm, latitude: 15 ° 47'59 ”N 93 ° 03'52” W. Annual temperature: 20 degrees celsius average. Production: 3,333plants per hectare, age from 8 to 15 years. Varities: Typica, Bourbon, Maragogipe, Yellow Caturra, Marsellesa and Gesha. The Argüello Enríquez family are the current owners of Finca Santa Cruz, on the side of the Triunfo Biosphere Reserve. 5 years ago we started producing specialty coffee, based on selective cutting, fermentation and storage protocols. In order to replicate processes every year we measure time, temperature, brix and phase degrees, in this way we produce quality consistent coffees. José Argüello is the youngest member of the family, married to Berenice Coutiño Ruiz and they have 3 children, Emilio, José Manuel and Federico. José was concerned to produce specialty coffee and to demonstrate that high-quality cup coffee are produced in Mexico and that they can compete with the best coffee in the world. In 2018 a protocol was carried out to produce Gesha variety in Natural Process. In 2019 the producer repliqued the protocols and participated in the Cup of Excellence Competition, obtaining the 1st place with a score of 93.07 points in cup, the results were satisfactory. Currently in 2021 they participated again and they wan the 1st place, being the first coffee farm to win this competition twice in consecutive timing. With this, Finca Santa Cruz is denoting the consistency of the coffee that it produces, that the quality is not the work of luck, that it continues and will continue to produce one of the best coffee in Mexico. The coffee farm has shade from trees such as Chalum (Ingra vera), they do selective cuts, just of ripe cherries and process in a natural way checking parameters. The drying is done on raised beds and the coffee from this lote was stabilized at 15% humidity one week and dryed at the end to 11.5% humidity. The storage of coffee is done in hermetic bags in a apropiet storage place. The quality control staff does quality evaluation constantly.
