4 - Xilontla - Mexico 2024 (Dry)

The Xilontla farm, located in the Veracruz municipality of Cosautlán de Carvajal, began its planning in 2018 when the property was acquired. Later, the producers set out to select the varieties they wanted to cultivate and started with the nursery. The farm, covering 85 hectares with 40 hectares planted with coffee, is situated at an altitude of 1350 meters. It features the ruins of an abandoned hacienda, which dates back to around 1850. It is said that an entire community once lived there, but due to earthquakes and access problems, it was eventually abandoned. Remnants of the daily life of those people still remain. In recent years, quality analyses have been conducted to produce the lot that competed in 2024, harvested in February.

The planning for the farm's plantation began before planting. Specific genetics of the planned varieties were sought, and the land was prepared with Tephrosia and green manure before planting. Fertilization is based on soil analysis and harvest quantity, as well as maintaining shade. The cherries were harvested at a ripeness of 25 degrees Brix and processed using anaerobic fermentation for 38 hours. Drying was carried out on African beds over a period of 25 days. Later, it was stored in GrainPro bags.
