Description
Fazenda Capao is located at the Chapada Diamantina, in Piata BA, 568 km (352,94 miles) away from the Capital Salvador. The city, 1.268 meters high is considered the most elevated on the Brazilian North-northeast and also the one with the coldest weather on the region, with temperatures varying between 35.6°F and 62.6°F during the winter.
Coffee processing system
The mature fruits (cherries) are picked in baskets and, twice a day the coffee is transported by tractors to the hulling machine, so that brewing doesnt happen.
The peeled coffee is spread on the yard for drying, on layers about four centimeters (1.57 inches) high, turned over about twenty times a day until it gets an ideal moisture point. The dry grains are divided in numbered lots and stored separately on adequate environment.
Quality concern
Mr. Salvador Mesquita, coffee-grower for thirteen years, since 2007 invests on production of quality coffee. This process is surrounded with care since its beginning, with the adequate prepare of the land for planting the seedlings, until the processing and storage of the grains.
He is concerned with the environment, annually performs soil analysis so the fertilizing is correct, and respects the environmental preservation area on his propriety.
The Fazenda Capao already produced lots of the champion coffee from the Quality Coffees from Bahia Contest, promoted by ASSOCAFE, and now stands among the finalists of the 12th Coffee Quality of Brazil and Auction Contest Cup of Excellence.
