History

Farm called El Eden is dedicated since approximately 150 years producing gourmet coffee, being the principal residence in the zone that has is house structures intact, the mill and some equipment that is been used the past 150 years for the processes of milling, the farm is harvested underneath shade; this farm was initiated by Mr. Abelardo Zelaya an agricultural visionary entrepreneur, the farm has been inherited for five generations, reports inform that when the coffee harvesting started in Honduras , this farm had the best quality coffee to export. This farm is located 4km of Santa Lucia and at 30m min from Honduras ’s capital Tegucigalpa. Quality Practices The wet mill processes is done under all the norms of quality recollecting only the red cherries, immediately after taking the pulp out dehydrated, after the natural fermentation we proceed to wash with clean water of the land; applying all the recommended techniques for the zone not to be hazarded, the crops are dried in solar dryers.

Environmental Care

The farm is located near the National Park La Tigra, where varieties of species are taken care of; also in the farm there are found some of these species since there is shade near the crops and its surrounded by a natural forest.

Coffee Processing Information

Fertilization: The farm is fertilized organically twice a year and the leaves are fertilized with natural products. Disease and Control The plague and disease control is done with first cultural controls, then biological, and finally is necessary to fertilize with natural products. Harvest: The harvest starts in December and ends in April every year, women often do this work. Wet Milling: In the farm we have all the physical structures needed for wet milling, such as the piles where the coffee is received, the pulping machine,its engine, fermentation tanks, a concrete canal for classifying the coffee, in firsts, seconds and thirds. Of course this lot is classified in firsts. Dry Milling This coffee is prepared by dry milling, in the farm , the other process for exportation is done in company that prepares coffee for exportation.
