Description
The Senhor do Bonfim farm is located on the Chapada Diamantina, in Piata - BA. The town, 1,268 meters above the sea level, is considered the highest in the north-northeast Brazil and also in colder climates of the region, with temperatures ranging between 2° C and 17° C during the winter.
Coffee processing system
The ripe fruit (cherries) are harvested over bowls and twice a day, the coffee is transported by tractors to the pulping machine, so that does not ferment. The peeled coffee is spreaded on the terrace, to dry in layers of about four inches high, and moved around twenty times a day until it reaches an ideal level of moisture. The beans are divided into numbered lots and stored separately in a suitable environment.
Commitment to quality
Mr. Benyosef, coffee producer for over fifteen years, since 2004, invests in the production of quality coffee. This process is surrounded with care since has started, with the proper preparation of the land for planting, through the processing and storage of the beans. Concerned about the environment, every year, conducts soil testing for the correct fertilization, using plenty of organic matter.
