Description
In the highest and coldest part of the southwestern border with Honduras and El Salvador , is the farm YIRE in the community of Aguacinga, municipality of Santa Elena, in the department of La Paz property of Juan Carlos Manueles Ventura. This farm represents for Juan Carlos and his family the main economic activity and contributes to the economy of 12-15 neighboring families are favored because they work in the maintenance, picking, hauling and processing of coffee.
Juan Carlos grown coffee with his wife and their two children, have planted the variety of coffee Pache at a height of 1770 meters above sea level that added to the special treatment that gives the coffee at all stages of production and preparation give results in excellent quality coffee.

Regarding the care of the crop, Juan Carlos says that caring for his farm keeping it free from weeds, performing a selective picking leaving in the trees the green beans and using only the mature.
Fermentation is carried out for 36 hours and then washes the coffee using water from a natural source to then put it into screens to achieve a 40% humidity, finally moved the coffee solar dryer to complete the drying takes between 17 and 20 days.
