Description
History of the farm: The producer’s interest in coffee began when he was young with his father’s support, who worked on a small farm. Later he bought a small property and has worked with coffee ever since.
Coffee processing system: Only well-ripened beans are picked. Then the less dense beans (floaters) are separated from the denser ones (contest-quality coffee). Then the coffee is hulled. Finally it is dried, an essential step for high-quality coffee.
Concern about quality: During the harvest, only ripe beans are selected to be hulled. The coffees are treated with the utmost care during the drying period. The beans are raked continually so that they dry correctly and do not lose quality. They are stored in appropriate places in order to avoid contact with odors and
