Antônio Andrade Pereira Filho and Maria da Conceição Costa Pereira decided to invest in coffee growing in Carmo de Minas in the early 70s. They bought 90 acres of land and started to plant the first seedlings. At almost the same time that these trees were growing, the couple’s two daughters were born: Maria Valéria and Maria Rogéria.

The sisters started helping the father run the farm at an early age. When they got married, their husbands joined forces in their wives’ common mission. When the father died, the sisters decided not to divide up the land, but to make their union even stronger. Therefore, they changed the name of the farm from Serrado to Irmãs Pereira (Pereira Sisters, in English) to seal the spirit of sisterhood.

Coffee processing system

The winning coffee is one of the lots that is in the New Flavors project created by CarmoCoffees. Carmocoffees was founded by Jacques and Luiz Paulo, with the goal of promoting the specialty coffees from Carmo de Minas to the world. The New Flavors program focuses on establishing new paradigms of taste and renewing processing methods to deliver beans with unique qualities to the most demanding clients. The special lot selected was process in the sweet shower method. The coffee goes into a tank for about 15 hours. It stays overnight in cold water, this way the coffee undergoes a kind of fermentation. The cold water does not allow the coffee to become fermented. After this, in the morning, the coffee goes to an African bed and stays there for 14 days. The coffee was kept in dry cherries until 16 days before preparation for the competition. The result is what you could taste: a very sweet coffee, fruity, with caramel flavor, citric acidity, very smooth body, and smooth aftertaste.
