Description

The farm history started since 1808. In 1950, my grandfather Antonio Martínez Ruiz inherited some plantations and bought Coatepec, the farm in which we currently work in. Antonio exported most of the coffee to Germany, however, years later, my father decided to start selling the coffee in Mexico.
I started helping my father with the farm work in 2011. In this same year, we converted nine hectares of land to produce organic coffee. In 2014, this coffee won the fifth place in the cup of excellence, this encouraged my father to turn the rest of the farm into organic.
In 2016, I became familiar with biodynamic practices due to the Biodynamic Meeting of Mexico. Following this, in 2017 we started using biodynamic practices in the farm.
My sister and I inherited the Farm and changed the organization focused in a lovely respect for the environment and social practices.
We are Alejandra, Ma de los Ángeles y Mariana Martínez Gama, Farmers of Farm Trebolillos. Our farm is in Veracruz state. This state is the first place in America where coffee was cultivated, thus, Coatepec municipality obtained the denomination of origin in the 20th century. Coatepec’s coffee has been recognized as prime quality all over the world, partly due to its ideal weather conditions (mild and foggy).
The varietals we produce in our farm are Gesha, Typica, Bourbon, Marsellesa, Catuai, CR95. Other crops we produce in the farm are banana, macadamia, vanilla, orange, lemon, lichee, lettuce, tomato. We employee 20 collaborators. Our harvest season is November to March. We process washed, honey and natural methods. Our coffee is shade-grown. Since 2015 we have been working with organic practices, and since 2017, we started working using biodynamic practices. We have organic certifications with EcoCert EU and Sagarapa. For packaging we use GrainPro hermetic bags.
At the present time, we work with Gaby Puente Fano who help us to use a corporative form of organization in the agricultural practices, using metrics and database to analyze the land and be more accurate and productive. We want to export some part of the coffee production, but the rest is intended to be sold in my Café named Café Katsina, since we want to offer Mexicans coffee of the finest quality.
I am in charge of the preparation of the coffee in the Café Katsina. In Café Katsina our cups of organic coffee are prepared with the utmost attention to detail, from the cultivation and harvest to the roasting and brewing processes.
We are a rural production society (SPR de RL de CV), concerned about paying fair wages and giving our workers the corresponding social insurances.
Currently, we are starting some social programs with the people working with us so we can contribute with the closest communities; We have a very powerful environmental program to maintain the ¨Bosque de Niebla¨ with endemic biodiversity.
