Cup of Excellence
Farm Don Rafa is in Las Margaritas municipality in Chiapas state. The history of the farm started in 2014, when I came to live in México, I had two objectives. The first is to have fair practices both with the producers and with the land, in addition to teaching them good practices to produce specialty coffee. The second is to make Mexican coffee known as the quality coffee that it is. From the selection of the ripe cherry, the cutting and attention to details by all the hands of our production chain, our constant training and passion for quality coffee we have provided quality equipment for planting and care of coffee plants. The varietal we produce is pache. The coffee plantations are surrounded by natural shade given by banana and chalum (Inga Vera) trees.
We select the best cherries and protect our beans from the origin; with the best selected grapes the coffee is passed through clean water tanks to eliminate the cherries that float and the remaining are taken to fermentation. The fermentation, an anaerobic process in which the coffee is placed in hermetically sealed Ecotact bags for 72 hours. Once the fermentation is done, the coffee is sun dried on african beds, a process that allows the complete oxygenation of the coffee because it is suspended in the air. We are caring day by day that the internal moisture of the beans is within the range of 10.0% to 12.0%. The special coffee is already dried and ready stored hermetically in Ecotact bags and the protection is reinforced with food grade jute sacks, ready to take to the warehouse. The quality evaluations are made by our director, representative winner of the 2nd place in cup of excellence 2019.
