In the fertile lands of Tlapacoya, where coffee grows under the shade of trees and the sky is tinted with jade hues at dawn. In 1960, the first plantation of the Typica variety was established, led by Mr. Lauro Romero Lechuga and his son Lauro Romero Cruz, thus giving rise to La Gruta Coffee Farm, located in the municipality of Tlapacoya in the state of Puebla. It is a gem of Puebla coffee, a family legacy that spans four generations. With an altitude of 1100 meters and its emblematic varieties such as Catuaí, Caturra, Marsellesa, and Costa Rica 95, it has managed to stand out for its exceptional quality. La Gruta has been recognized among the top 30 coffees in Mexico, which speaks to its commitment to excellence. This recognition not only celebrates the superior quality of the coffee but also the hard work and dedication of Yamil, Josue, Carlos, Adampol, Suraya Romero, Edgar, and Jonatan Olarte, coffee growers who are part of La Gruta Farm and Huelik Cafe.
With firm hands, the group of producers began implementing innovative techniques on the farm starting in 2018, always respecting the balance of nature. Their dedication and love for coffee led them to experiment with unique fermentations, seeking perfection in every cup. The opportunity to showcase their work to the world came with the 2019 Puebla Pride Coffee competition, where they presented their first batch of specialty coffee. La Gruta obtained an excellent score, placing it among the top competitors. Their success not only honored their family and the farm but also elevated the name of Puebla coffee.
The next opportunity arose in the 2022 Cup of Excellence competition, where Edgar Olarte Maldonado with a lot of red honey lacto fermentation for 72 hours managed to score 87.2 pts. SCA, becoming an international finalist. And subsequently, in the 2024 Cup of Excellence, Jonatan Olarte became a finalist among the top 40 best coffees in Mexico. The story of La Gruta Farm is a testament that, with dedication and respect for the land, one can reach for the stars and leave an indelible mark on the world of coffee.
