At an approximate height of 1350 to 1380 meters above sea level, it is a preserved farm with the typical varieties, mundo novo, garnicas and yellow caturra. Its nutrition is 100% organic, Vermicompost and organic matter are used. Finca El Bordo has a variety not only of coffee but also with fruit varieties. Coffees from this farm are shaded and their average harvest is between February and March. Part of April. The climate is humid since an important part and that characterizes this farm are its always humid lands due to its slope of terrain and shade. A black land with a lot of rock predominates. Disadvantages also because maintenance is very difficult (chapeo, and carrying of cherries). PARCHMENT COFFEE PROCESS This year we participated with an anaerobic washed coffee process. This batch began to be produced in February with the selection of healthy and intense red cherry coffee, it was classified in vats with water to remove floats but also a cherry preferment. It was then pulped and the anaerobic process started. Its drying was in sieves and in meshes for 1 month. Preserved on parchment in bags
