Mario MamaniI come from the Camacho Canton Escoma Province of the Kala Kala Community, and I live here since my youth, which would be around twelve years, and it’s been around four years since I bought this filed and started to work with coffee. My coffee’s quality is excellent and it is at more than 1700 meters above sea level. I am from the CIANA cooperative, and it is the first time I participate in a Cup of Excellence, and in Santa Cruz I did not expect to make it to the fourth place. I feel very good of having achieved that place on my first year participating in the Cup of Excellence. With the money of my coffee’s sale, I want, above all, to improve my coffee plantations, improve even more the quality of my coffee for next year, and I would like to tell to all the other producers to work well for next year, since it depends a lot on the handling they have of their coffee; you cannot even be a little bit neglective. Quality Practices The coffee activity of CIANA is developed on an extension of 570 hectares in charge of 600 families with an average of 9 hectares per producer, with an annual return in production of 140.000 kg of green bean coffee annually. The coffee is cultivated between 1.350 to 1.700 masl on mountain slopes of cloudy forests under shade nearby the Bella Vista National Park , where the coffee growing of Typica variety is predominant. The harvest between the months of May and September is done manually, guaranteeing only ripe cherry bean harvest. The pulping process of coffee is done in a mechanic pulper, immediately after the daily collection of coffee is finalized. The coffee is fermented during a period of 16 hours, time in which the mucilage is separated from the bean. This coffee is washed with clean water, in order to be sun dried naturally on wooden tables.
