Farm

Histroy Fazenda Cachoeirinha has been working with coffee plantations for over 50 years. In 1974, Messrs. Amaury Junqueira Villela and Evaldo Junqueira Villela became the farm's managers, by inheritance, and since then they have been working to improve the quality of the farm's coffee. Evaldo is a member of APROCAM, an association where specialty coffees production and commercialization have priority, and a member of COCARIVE.

Coffee processing system

The selective harvesting is performed manually on cloth when the fruit is ripe, to prevent the beans from touching the soil. On the same day the beans are picked, they are placed in bags and transferred to the processing area of the Sertao Group, where they are cleaned, pulped dried on a terrace and in driers, always following the same quality standards. As soon as the coffee is washed, the dried beans are separated from the others, and subsequently the beans are transferred to the cherry pulper, which in addition to puling the cherry beans, also separate them from the green beans. The pulped cherry beans are taken to the concrete terrace to dry, and if required, they will return to the drier in the final drying phase to reach the ideal humidity level, after which it is placed in wooden bins for at least 30 days for the beans to rest and to homogenize. When the beans are removed from the bins, always separated by lots, they are ready for final processing and are transferred to COCARIVE's warehouses in Carmo de Minas, State of Minas Gerais. Concern with quality Agronomists from Pro-Cafe, of the city of Varginha, State of Minas Gerais, supervise Fazenda Cachoeirinha's coffee production since the beginning. The search for productive varieties always takes into consideration the farm's deep concern with its water sources and with environmental preservation. Priority is given to the continuous search to improve the beans and cup standards. All coffee lots are cupped and monitored year after year. The option to produce specialty coffees demand the producer's attention and dedication. Traceability is indispensable not only to understand the property and the product but also to arrive at a decision as to when to substitute a plantation and concerning the varieties that should be planted.
