Overview

Nossa Senhora Aparecida Farm has worked with coffee plantation for more than 50 years. Mr. Edmo Junqueira Villela has always focused on the quality e has worked for he improvement of the quality of his coffee. Mr. Villela is associated producer of the APROCAM, an association that aims the production and the trade of special coffee (www.aprocam.com.br) and he is also a cooperated of COCARIVE (www.cocarive.com.br). Processing system of the coffee beans The harvest is selective and done by hand over a cloth, avoiding the contact with the ground, and when the beans are very ripe. On the same day, the coffee is put in bags and taken to the processing area. The coffee processing is done in the processing center on the Nossa Senhora Aparecida Farm. In this place, the coffee is washed, pulped and dried on the patio and in the drier, always following the patterns of quality. When the coffee is washed, the machine also separates the dry beans and after, in the Pulped machine, the green berries are also separated. The pulped coffee berries are taken to the drying on a cemented patio, and, if necessary, can pass to the drier machine so that it can reach the ideal level of humidity. After the coffee is dried, it is kept in wooden storehouses for a period of at least 30 days, for the rest and homogeneity of the coffee beans. When they are taken out of the storehouses, they are ready for the processing and transport to the warehouses of COCARIVE, in Carmo de Minas, MG. Concern on the quality Since the beginning of the production, Nossa Senhora Aparecida Farm counts on the supervision of agronomists of the Fundacao Procafe, from the city of Varginha, Minas Gerais. The search for the productive variety is carried on together with the concern on the rivers and the environment preservation. Seeking for the improvement of the coffee beans and of the patterns of the drink is a priority. All the samples of coffee are tasted and supervised each year. The choice of producing special coffee requires a lot of attention and dedication of the producer. The tracking becomes something indispensable not only to understand the property and the product but also to take a decision about the replacement of a crop or not, and the option for the varieties to be planted.
