Santa Delfina y Anexos El Quiche, in the heart of the Ixil Triangle is home to the millennial mountains of Chajul and the birth place of one of the finest coffees in the world, “el Cafe de la Paz” (the coffee of peace) produced by Finca La Perla and Finca Santa Delfina. This exceptional coffee, known as “Gourmet Coffee” because of its incomparable quality, flavor and aroma has been rewarded internationally and recognized by expert cuppers as one of the best coffees in the world. These incomparable qualities come from the lands of Xamac, meaning sleeping woman in Ixil. They were founded in 1895 by the visionary determination of a proud family who decided to plant their roots in these indomitable grounds, of immeasurable and mystical beauty, blessed by God. With determination, perseverance and unbreakable faith, they sowed the seed of solidarism with the honest and hard working Mayan-Quiche people. Their daily dedication and affectionate care to the people and the land has worked in harmony with nature through all these years. The utmost ecological respect has been given to the mountains, forests, rivers, and exuberant vegetation which in turn have given fruit to this incomparable coffee. Coffee from La Perla and Santa Delfina is cultivated in a cold climate enriched by its rainy microclimates at heights above 4500 feet with annual rain falls of 4500mm. It is washed by the crystalline and pure waters of the Xamac River and transported by noble mules. The combination of all these ecological gifts and the sacrifice of all the workers that have believed in this dream is the fantastic outcome of “el Cafe de la Paz”.
