The name of my farm is Huehuetecpan. The Coffee production we produce consists of 3 hectares with varietals such as Typica, Bourbon, Garnica and Mundo Novo, having as natural shade trees such as banana, orange, sugar cain, chalahuites. I started working when I was 15 years old when my father could no longer continue working the farms and I decided to stay to support and produce them to help the family. The coffee of our farm is the following: the ripe coffee cherries are selected. The coffee is washed to remove anything foreign to the grain.
The coffee arrives at the mill and is immediately washed and processed to prevent the cherries from turning sour and taking on an unpleasant color and flavor. When making coffee, it is rinsed and deposited in airtight drums without water for a long and oxygen-free fermentation.
After 3 days it is completely washed and taken to the African beds for drying. It is about drying in the shade so that it is as slow as possible. We store the grain in GrainPro bags and yute sacks.
