Cup of Excellence
Located: on the fertile squirts of the Poas Volcano in Sabanilla of Alajuela.
Altitude: Our land starts at 1300 masl all the way up to 1650 masl.
Climate: this privliage land has two well defined seasons, wet and dry. The total rainfall is 3.000 mm on 155 days a year, with a 84% humidity. The average temperature is 20ºC, with a brightness of 44 to 54% and 2.150 hours.
Soil: Soil are Andisol; they have a slight tropical acidity tdue to the volcanic ashes; rich in organic matter that benefit the humidity, a good root distribution and oxigenation.
VARIEty: CATURRA, CATUAHI, , VILLA SARCHI.
Cup: Dark chocolate, brown sugar, hazel nut, peach, aroma of lilies. High acidity, and a complex mouth feel.
MICRO-LOTS: we do a very delicate job of separating the lots and processing each of them separately, this allows us to find those flavors that express delicate, harmonious and complex coffees.
Process: this coffee is a natural process. We first measure the brix degrees to determine the perfect ripening moment and we only harvest coffees that have above 18% brix degrees.
The we whase the cherries with clean, fresh and we take out the floaters. We take the coffee to the drying patios, not moving th e coffee al lot at first and covering it. We pick it up in the afternoon and keep it safe at night. We do a manually sellection of unmature fruit.
The drying takes form 22 to 27 days.
