ALLAN OVIEDO RODRIGUEZ
Café Don Joel is a family project, in which my wife, my eldest son and I are mainly involved, and where we have the support of the others, especially at harvest time. This project was born with the aim of finding a better alternative for our coffee, without imagining that it would bring us a great passion for this world, learning new processes and working with new varieties to produce better coffees for our clients every day. Thanks to the Cup of Excellence project, we have been able to make improvements in the mill, which allows us to carry out the processes in a more efficient and ecological way, avoiding excessive consumption of water and electricity. We also seek to implement sustainable management to improve and conserve our soils. This lot had a rest washed process, which consists of pulping the coffee, resting it with all its honey in uncovered tanks, then washing it and passing it to the African beds to finish its drying process.
