Cup of Excellence
The name of the farm "ojo de agua" or waterhole derives from the fact that in the middle of the land there is a source of spring water. It has an area of one and a half hectares with 100% certified Marseillais plant. It is located in the community of Pahuatitan, Huitzilan de Serdan municipality, at Puebla state, at an altitude of 1,100 meters above sea level. The farm has a diversity of crops such as: orange, tangerine, banana, zapote, guava, and native trees.
This small coffee plantation has been producing coffee for several years, however every year new plants are being restored, the Marseillaise variety is its sixth year of planting and its fourth year producing, for its quality in yield as well as in cup we are very pleased with this coffee. The harvest of the coffee cut begins in December and ends in April, but only the months of January, February and March are what we consider specialty coffee since they are halfway through the harvest. We have the certification: coffee practices and fair trade which share teachings with us to be friendly with the environment.
As a woman, I am proud to have obtained the 26th place in the Cup of Excellence Mexico since, being my first year, I have a wealth of experiences in specialty coffee and I hope to inspire many women to continue improving in activities related to agriculture.
