La Cima acts as the complement to Finca El Jardin, a property acquired by our family over a century ago. Presently overseen by the fourth-generation producer, Pablo del Cid and Lithuanian-born Eva Varanaviciute del Cid, it is situated in Santa Elena Barillas, Guatemala, in close proximity to the Pacaya Volcano. This volcanic presence continually enriches the soil with mineral-rich ashes. Since 2020, our focus has centered on cultivating high-quality Micro Lots, prompting ongoing enhancements to our facilities. Through a partnership, we have acquired a Penagos Eco Mill renowned for its eco-conscious design, utilizing significantly less water than conventional mills while catering to the three primary coffee processing methods: Washed, Natural, and Honey. Furthermore, we have constructed a brand-new greenhouse dedicated to the drying of parchment and coffee cherries, ensuring uniform drying processes and the preservation of coffee bean quality. Our commitment to innovation extends to the introduction of various coffee varietals such as Pacamara, SL 28, Batian, diverse Ethiopian strains, and Anacafe 14, all aimed at offering exceptional coffee lots in the future.
