Coffee farm located in the central mountainous region of the state of Veracruz specifically in the municipality of Ixhuacán de los Reyes with a height of 1450-1500 M.S.N.M. and with optimal climate conditions for the cultivation of coffee such as abundant rains and a temperate climate of approximately 19-22 ° c. The farm has 19 hectares of surface of which 16 are used for the cultivation of coffee and 3 belong to a forest reserve of Encino, a native tree of the area. This farm was designed 6 years ago when the coffee planting began with the intention of producing 80% to the normal market and 20% to the specialty through the selection of varieties such as Typica, Geisha and Pacamara which are prepared in different processes for sale. The coffees obtained from the farm are benefited with a water saving system and with separation of floats in cherry and green coffees to obtain specialty coffees. The washed coffees are processed in the wet mill and the Naturals and Honeys pass a specific area for processing and drying in African Beds. In 2018 we participated in the Cup of Excellence with a sample of washed coffee in which we are finalists. With the idea of ​​making specialty coffees, we started with analysis work on all our batches, we roasted and tasted all the samples to know our potential and what we offer to our customers. We take training for roasting and tasting as well as the preparation of specific batches of Washes, Honeys and Naturals. The farm produces between 800/900 quintals per year of which we only obtain 200 quintals of specialty between the Natural, Honeys and Washed processes. Once the coffee is dry, it is packed in jute bags and a plastic bag for conservation. They are stored in a warehouse and are only opened when they go through the batch preparation process for sale. All coffee is labeled, weighed, and cataloged by type of process and quality for offering to potential customers. In the coming years we will have the first lots of Gesha and Pacamara varieties to compete. We hope to be present again among the finalists of the Cup of Excellence.
