Cup of Excellence
Located in the town of La Gruta in the municipality of Tlapacoya, Puebla, Mexico, the farm Vega belongs to a bigger farm named as well La Gruta. The farm La Gruta has its origin in 1960 when the first coffee trees of the typical variety were established, it is located at an altitude that ranges between 1,100 and 1,400 meters above sea level. Some of the trees that give natural shade to the coffee plantations are chalahuite trees in a frame of 5x5. The farm has a silty loam soil with a pH of 4.2 and a suitable climate for the production of high quality coffee, it has an area of 5.3 hectares distributed in 4 sections:
1. Red catuai variety in 2.3 hectares,
2. Costa Rica variety 95 in 1 hectare,
3. Aztec gold variety in 1 hectare and
4. Geisha variety in 1 hectare.
The process chosen for the contest was a wash, we began with the collection of fully ripe fruits with 25 degrees brix, they were left to rest for 24 hours in stone, later they were pulped and washed with spring water, they were placed to dry in shakers at full sun 3 days for the grain to lose 40% moisture, later it was placed under 50% shade avoiding exceeding 30 degrees Celsius until it reached 11% moisture, it was left to mature in ixtle sacks for 3 months under controlled conditions . The peak of harvest depends on weather, between February and March.
La Gruta-Vega farm currently supplies 10 coffee bars throughout the republic, the processes we offer our customers are:
