The farm is located at the locality of Totutla, municipality of Huitzilan de Serdán in the Northeast Sierra of Puebla state. The farm named "LOS NARANJOS" (the orange trees) was acquired in 1974 thanks to the effort and work of my father, Mr. Rafael Cortes Hernández, since then he has dedicated himself to the cultivation of coffee. I was very interested in the cultivation of coffee since I was a child. When my father decided to transfer the property to me in 2012, I decided to renovate the coffee plantation with varieties: Garnica and Marsellesa. At the farm we are committed to give the coffee production a sustainable and responsible management with the care and conservation of the environment, protecting and prohibiting the hunt of wild animals and conserving plants and trees of the region which provide the plantation with a regulated shade such as Chalahuite (Inga vera), Jonote (Heliocarpus donnellsmithii) and Citric fruits trees. The work that is done on this farm, including the harvest, is carried out by people from the community who keep their jobs throughout the year. The cultivated coffee trees are selected from the cut during the harvest, then they are taken to the humid beneficiation and pulped to give it a prolonged fermentation of 105 hours, taking care that a stable low temperature is maintained, and then slowly washed and dried in African beds or sieves.
