Cup of Excellence
Jose is a 2nd generation coffee producer who has been producing specialty coffees for 7 years. This transition to the specialty coffee production came from the motivation to make things different once he decided to come back to working at the farm that he inherited from his father after having worked in the transportation industry for 23 years.
He saw the potential to grow a different variety such as Pink Bourbon and discovered that changing the fermentation times and making different decisions based on the weather was key to getting a good profile. Jose explains that he paid close attention to the coffee he submitted, a 48 hours fermentation process under water that he washed and dried in african beds for 15 days.
This is the 2nd time he participates in the Cup of Excellence contest being finalist for the first time.
