Cup of Excellence
I am Olga Marina González, owner of La Picona farm, I have owned this farm for 20 years and during this time I have dedicated myself to working specialty coffees.
2. The farm is located in the community of Las Manos, Dipilto, Nueva Segovia, right on the border with Honduras, its productive area is 12 blocks of coffee and 4 blocks that are conserved as natural forest, its height ranges between 1250 -1500 meters above sea level, with a suitable and pleasant microclimate for the production of special coffees, its soils are sandy loam, the conservation of its forest makes it a very special farm.
3. The farm is composed of 4 varieties (mainly Maracaturra, Yellow Catuai, Caturra and Java) all of them are grown under the shade of Guaba, bucaro, Liquidambar and some fruit trees such as Orange, lemon and jocotes. Its ecological environment is unique because it conserves a forest right in the highest part of the farm which allows us to have a great diversity of animals and trees that come from our own Zone, we can say that it is our small natural reserve.
4. I try to be very careful in the post-harvest handling of my coffee, together with my children we focus a lot on quality, we try to keep everything clean, follow our own fermentation protocol and above all have a good workforce, For this winning coffee in COE Nicaragua 2021 the following fermentation was carried out: 16 hours in natural fermentation in grapes in an aerobic way, we pulped, after pulping the coffee was fermented for 60 hours in an Aerobic way (Grain pro bags) for a total of 74 hours of fermenting, then it was taken to dry under sun and African beds at a dry mill.
5. I have high expectations for this contest, I had not participated in the cup of excellence for five years, so I hope the best especially for our international auction since if we reach a good price we can continue working our farm, helping our collaborators and investing in new social projects
