Einar is a second generation coffee grower whose curiosity for the specialty coffee production started 14 years ago during a visit to a specialty coffee farm in Libano, Tolima. This was for him the beginning of a new project in which he started to grow different varieties and find ways to improve their profiles through processing.
This year he presented a Gesha washed anaerobic, fermented in cherry for 40 hours and then in GrainPro bags for 36 - 40 hours once it was depulped and dried in African beds for 20 days.
This is the second time he classifies in the auction. Einar expects to be able to improve his drying facilities in order to optimise this important phase.
