INFORMATION OF THE FARM : The farm's soil is generally clay-loam and the minimum average temperature fluctuates between 16.4 to 16.7 Cº and the maximum average fluctuates between 28.5 to 29.1 Cº, depending on
the year. The rain is also fluctuating, in 2022 we received 3,570 mm and in 2021, the driest of
the last 7 years, 2,390 mm were received, the rainiest months being from June to October. Due
to a fairly long dry period (December, January, February, March and April) the use of shade is
important to avoid water stress on the plants. The property has a lot of stone, which heats and
dries the soil quickly, so we maintain a shading level of approximately 50% shade with varieties
of Ingas -Type evergreen trees (Pepetos , gravileos , Cuje de rio , Sangre de perro , Cortez ,
Limonsillo etc ) although we try to keep some fruit trees such as sapote, mangoes, oranges to
help to wildlife on the property. Couples of deer, garrobos and a variety of birds are observed.
(Doves, Clarineros, Sparrows, Chiltotas, Hurracas, Sparrowhawks etc).
The fertilization is distributed in three applications of 3 ounces each with complete formulas and
an additional one from Bokashi as a soil and organic matter improver.
Weed control is achieved with two capias and one herbicide application per year and thus we try
to minimize soil erosion while maintaining a certain controlled vegetation cover. In certain very
steep parts, vetiver barriers have been planted to help control erosion.
This year, harvest 2022-2023, an anaerobic process carried out in the Los Ausoles Cooperative
was experimented on this Yellow Pacamara variety with very good results when the coffee
expressed notes of very pleasant tropical fruits like Tamarindo , Peach and Maracuya .
Finca Argentina bought it in 1972 by Guillermo Martinez and inherited it to his son
Mauricio Martinez in the year 1986. His son Alejandro Martinez studied a Master's degree in
Banking and Finance in the USA and after working in New York in Mergers and Acquisitions at
Bank of America for 7 years, he returned to El Salvador and decided to help manage the farm
by supporting new marketing policies. This is how we focused on Specialty Coffees and on
renewing a 40 to 50 year old plantation, with promising new varieties in cup and quality. We
started with a garden of 18 varieties to select for resistance to rust and cup quality and finally in
2014 we decided which varieties we would plant. So we chose Red Pacamara, Yellow
Pacamara, SL-28, Ethiosar, Portillo, Obata. Marseillaise and H1 (Central American)
We like this last variety very much and we presented it in the Cup of Excellence in 2019 with a
NATURAL process. He obtained 85.88 points, remaining in the position of National Winners.
This year we decided to vary the process and we sent our Yellow Pacamara with the Anaerobic
process, obtaining a score of 87.13 in the National Winners group, greatly improving our
participation. We continue focus in improving quality and offer our buyers different varieties with
different attributes
