Description
This farm located in the Tlanalapa area, in the municipality of Coatepec, Veracruz. It was acquired in 1986 by Mr. Ezequiel Ramírez Mávil, who began to cultivate it since then, carrying out a series of changes and improvements, based on his experience already acquired in the cultivation and processing of coffee.
The farm has an area of 3 hectares with a broken relief that goes from 1,270 to 1,300 meters above sea level. This natural structure of the farm and the ridges that existed vertically caused the soil to be greatly damaged in rainy seasons, as a result of the erosion. To solve this problem and preserve soil fertility, contour lines and ledges were drawn on the ground, as well as new furrows, now horizontal to the ground, where new plants were later planted.
With this, cultivation work such as planting, fertilizing and harvesting has also been facilitated.
The varieties that are in production are Catimor, Mundo Novo and Typica, which are produced from seed and later from the seedling for subsequent sowing.
A very relevant characteristic of our farm is that it has two freshwater springs that join a stream that crosses the property, which is a fundamental part of the existing microclimate on the farm. These springs have been cared for and preserved during the last 30 years that the farm has been in our hands. Aware that for this the use of shade trees such as chalahuite, jinicuil, ixpepel, and more sustainability practices is essential.
In the cultivation practices of the coffee plantation, traditional techniques such as mowing, hoeing, pruning and organic fertilizers such as vermicomposting of coffee pulp and fertilizer of animal origin have been implemented. In addition, to complement the minor elements of the earth, ashes have been incorporated into the soil, which are obtained from the combustion of coffee straws in the drying process that takes place at the San Rafael Mill, located in Pacho Viejo, Ver .
The production of La Finca El Manantial, is processed mostly into washed coffee. Being this year the first time that a part of the harvest is used for the elaboration of a Natural coffee, with the intention of taking advantage of the characteristics that the coffee from this farm offers us. The batch of coffee that is presented in this 2023 Mexico Cup of Excellence Contest was harvested by a team of 20 women and men who come to harvest every year; and processed in the month of February by mr. Ezequiel Ramírez Mávil, at the facilities of the San Rafael Benefit.
