Description
Flávio Márcio is a second-generation producer. His father farmed until passing away when Flávio Márcio was 12. He began his own story at 15, helping him mother and envisioning his purpose more clearly every day: cultivating the land. He has acquired vast experience over years of running the family business with different crops, but without doubt coffee is his passion, as well as the passion of the majority of those who visit the Cerrado Mineiro region. His first specialty coffee farm was at a rented farm in Campos Altos, Minas Gerais. From the beginning, he realized that his main purpose was to produce extraordinary coffees and nowadays it is one of the areas on which he grows the most incredible coffees in the High Cerrado Mineiro.
Women are involved in the production process. One helps with the harvest, one handles daily control, entries and issuance of coffee entry and exit invoices, and one runs the wet will for dry and wet processed coffees.
Coffee processing system
The coffee was picked when around 90% of the fruits were ripe, placed in a trailer and taken for fermentation under the shade of a plastic cloth. After 48 hours fermentation was interrupted and the coffee was washed to separate the “raisin” fruits. This lot is made up of these “raisins” and was dried in a thick layer on the asphalt patio to 18% humidity, later it was piled for slower, more homogenous drying.
Concern about quality
They always do mapping before the harvest to know maturation percentages and to measure brix. The harvest is done with a maximum of 15% green cherries. The coffee is picked selectively and post-harvest processing is done with much care.
Certifications
Until 2021, the farm was UTZ certified. From 2022 it has been Rainforest Alliance certified.
