Finca HUEHUETECPAN is a property located in the municipality of Cosautlan. At an approximate height of 1380 meters above sea level, it is a preserved farm with the typical varieties, mundo novo, garnicas and yellow caturra. Three generations we have conserved these native varieties for their good quality and production results. Its nutrition could be said to be organic in its entirety since it has more than 25 years without commercial compost (fertilizers). Finca HUEHUETECPAN has a variety not only of coffee but in conjunction with fruit varieties such as oranges, banana, limes, trees with shade flower of sempasuchil. Coffees from this farm are shaded and their average harvest is between February and March. PARCHMENT COFFEE PROCESS This year we participated with an anaerobic washed coffee process. This batch began to be produced in the month of March with the selection of healthy and light red cherry coffee, it was classified in vats with water to remove floats. It was pulped and the anaerobic process began ... Until this micro batch is finished. Its drying was in sieves and meshes for 20 days.
