Description

The history of farm San Rafael started 15 years ago by my father in search of better markets where added value is recognize. It is located in the municipality of Cosautlan de Carvajal in Veracruz State. We produce varietals such as Typica, Mundo Novo, Garnica and Yellow Caturra. The coffee plants are cultivated under natural shade from trees such as chalahuite, orange, medlar (Mespilus germanica) and macadamia. A more specific process was carried out and better selection of fruits, as well as better nutrition in the land. Selected ripe cherries are cut in the farm "Cherries are washed to remove any foreign matter (earth, threads, stones, etc.).
The coffee is made up on the same day to avoid sourness. Then we let it ferment for 40 hours depending on the favorable climate. Afterwards, it is washed very well. Slow drying is done in Afrinca beds according to the climate and amount of coffee.
