History

Jose Vallecillo Yanez is a coffee producer from Montecillos born in Comayagua in 1960; he started harvesting at age 30 and has been improving the process to obtain a good quality in his product. He went to elementary school “Manuel Andara”, junior high “Instituto Inmaculada Concepcion”, and high school “Instituto Guaymuras” in Comayagua, and then he started working and also started saving money to buy his first coffee growing farm (3mz) he kept harvesting and buying more coffee growing farms until he got 34mz of coffee plantations. Quality Practices The coffee is processed by the traditional methods like Dry milling and coffee dried in cement yards, there is no use of pesticides, herbicides, or chemicals used to control plagues, his dry milling system includes a classification system of coffee classification in a concrete canal to obtain good quality.

Environmental Care

The coffee is harvested under the shade with species like Guama, Guanijiquil, woods, and fruits. This assures the protection of nature. Some species of animals found here are: rabbits, squirrels and variety of birds.

Coffee Processing Information

Fertilization: Coffee is fertilized with products such as Urea y Kcl. Harvest: The harvest starts in December and ends in April every year, women and men do the recollection of fruit work. Wet Milling: Mr. Jorge has his own wet milling system, he has a machine to take the pulp out, fermentation piles, and cement yards to dry coffee until the dry coffee stage.
