Since the beginning of the coffee activity in Fazenda Santa Emiliana, about 40 years ago, there was concern in assigning the high standard of product quality. This differential has to have greater prominence since 2000, when a lot produced in Santa Emiliana, was classified into quality competitions with national coverage. The owner Rogerio Ferraz Tostes, son of farmers, began his life in Rio de Janeiro as an economist. To inherit the parents farm, located in the town of Carmo de Minas, in south of Minas Gerais, located on Mantiqueira Mountain Range, changed the city permanently, and profession. Believing in the potential of the region for the production of specialty coffees, invested their knowledge and allied support to entities such as COCARIVE - Regional Cooperative of Coffee Growers of Vale do Rio Verde, EMATER-MG - Enterprise Technical Assistance and Rural Extension State of Minas Gerais and SENAR - National Service of Rural Learning, qualifying their workforce consists of eight employees and following the guidance of agronomists and technical experts. The producer has classified several lots of coffees among the finalists in competitions held by Illycafe and EMATER and this year, made his debut as a finalist in the Cup of Excellence, sponsored by BSCA, bringing notoriety to his work.

Coffee processing system

The selective harvesting of ripe beans, usually begins in May and extending through the month of August. There is a coffee processing system, which are washed and peeled on the same day, they are picked and spread out in thin layers on the drying terrace. From the second to the fourth day, the beans are moved several times a day and the fifth to twelfth day, besides of being moved, they are huddled and covered every evening. On the thirteenth day, when the humidity level is close to 15%, the coffee is transferred to a granary of rest, where it remains for about 45 days. After this period, the beans are again brought to the terrace to dry until they reach the ideal humidity for processing and storage in COCARIVE, where the coffee goes to the final procedures of preparation and selection.

Commitment to quality

The producer Rogerio Tostes Ferraz seeks to participate in all courses of technical instruction promoted by SENAR and cooperative, and be enrolled in the program Certifica Minas from the State Government, which attests to good agricultural practices, following international standards of production respecting the environmental and labor standards. He has the technical assistance from CORARIVE and EMATER-MG in Carmo de Minas, in all the farming procedures and wants that its brand product acceptance and quality bring benefits to all whom directly or indirectly participate in this productive process.
