History of the farmThe Portuguese
immigrant Custodio Ribeiro Pereira Guimaraes acquired hilly lands in the
region known as Ribeirao do Carmo, today the city of Carmo de Minas, in
the south of the state of Minas Gerais in the year 1811. Nestled in the
foothills of the Serra da Mantiqueira mountain range, the Fazenda das
Tres Barras began to conquer its space among the best coffee producers
in Brazil in the 19th century. The first records of coffee production
from the property date from 1864.Coffee processing
systemDue to the slope of the lands where they are
cultivated, the coffees are stripped by hand at the most favorable and
propitious moments onto suitable fabrics, in order to avoid contact with
the ground, from where they are immediately transported to the
processing place. Once pulped, the cherry bean is taken to drying
patios, and, if necessary, to a rotating dryer, after which, it is
deposited for a period of 30 to 60 days in suitable granaries for rest.After being processed, the coffees are sent
to the COCARIVE warehouses where they are analyzed and prepared
according to the needs of the market.Concern about

however, dispensing with the item yields, we depend on highly technified
and disseminated by COCARIVE in an important partnership with EMATER-MG.
