Description

Coffee production is the prominent activity at the farm. It started small, but with a lot of dedication and passion it grew and coffee cultivation today takes up more than 800 ha. With a focus on producing specialty coffees, since the beginning the objective has been an excellent drink. Among the varieties grown are catuaí, catucaí, Icatu, topázio, mundo novo and the popular yellow Bourbón. 

The farm is a member of Santo Antônio Estates 

Coffee (Sancoffee), a cooperative dedicated to the direct trade of its members’ specialty coffees. 

The coffee production has the Rainforest Alliance and UTZ Certified certifications. 

Fazenda São Paulo has a carbon offset project in progress with the objective of becoming self-suffcient in energy. 

The farm also participates in social initiatives. There is a school and a kindergarten for the workers’ children and also for the children in the community, in addition to several other buildings for socialization, leisure and educational and inclusion projects. 

Producer José Carlos Cepera, founder of Fazenda São Paulo, believes that its development was due to the trust he placed in his workers, who are highly- valued for their work. One of the farm’s mottos is “love what you do.”

Coffee processing system 

The cherries are picked selectively. 

The coffee is processed by the wet or dry method, depending on the variety, plot and percentage of unripe cherries. Drying is done on paved patios and finished in mechanical dryers seeking to mitigate climactic risks. 

The coffee is stored in parchment (pulped natural) or in the dry cherry (natural) in dry, well-ventilated granaries before processing. The coffee is processed, bagged and sent to Santo Antônio Estates Coffee, which has a climate-controlled warehouse to better conserve the quality of the coffees.

The lot with 95% ripe cherries was sent directly to the patio and spread in a fine later (bean by bean). On the first two days of drying the coffee was not moved. Later it was raked from 8 to 12 times per day. At night, the lot was covered in order to protect the cherries from dew and remoistening. After the tenth day, the lot was sent to the dryer to finish the drying process. The dry cherries remained in a wooden granary to rest for 30 days before being hulled (processing). 

Concern about quality 

Beginning of the harvest in each determined lot through monitoring bean maturation; Separation of lots by drink quality, elevation and variety; Periodic cleaning and sanitation of the post-harvest infrastructure; Spreading of the coffees on the patio in a thin layer on the first days and gradually thickening the layers in order to achieve adequate drying; Finalization of drying in low-temperature dryers, avoiding intrinsic damage to the coffee beans and compromising quality;  Use of a rest period in appropriate granaries before processing; Partnerships with research centers with the objective of worker training and process improvement.
