Description

Active in the coffee market for 20 years, Fazenda Mantissa is present at all the stages of the production chain of the product, from planting crops to extracting the coffee in the cup for the end consumer. With a focus on quality, the company has the goals of performance in flexibility, speed and reliability, fundamentals for good customer service. It seeks social, environmental and financial sustainability in its activities in order to aid in the development of its employees and the region as a whole. As for characteristics of soil, micro-climate and elevation, it is in a privileged region: elevation from 1056 to 1260 meters, intense sun during the day, cold at night, steady average rainfall and very rich soil – characteristics of the region, Sul de Minas 

Coffee processing system 

The harvest is done mainly by hand; only 10% of the farm is harvested mechanically, intensifying demand for labor, offering jobs in the region. When it arrives at the patio, it is processed by the dry method – natural or the wet method, only not demuscilated – the mucilage is not removed from the coffee. 

Concern about quality 

The farm has its own roaster, an Opus 4, from Lilla, for specialty coffees and a Carmomaq for service with superior and traditional coffees, as well as a Q Grader to control quality during the entire production – which goes all the way to the gate. The principal characteristics of the coffee: aromatic notes, body, sweetness, acidity, and of yellow and red fruits. Chocolate and acidity present. Awards achieved: Illy finalist and finalist  in the BSCA Naturals and Pulped Naturals contests, placing 5th in the contest for natural coffees.
