Description

History of the farm

For ten years Edilaine has cared for her father’s coffee. Sítio Leite has two thousand coffee trees. The farm is worked by the producer and her husband, with the help of their children in the post-harvest process. Each year, the family seeks to care for and improve the quality of the coffee.

Through much effort, the producer managed to install new equipment, including a washer, huller, drying and a machine to clean the coffee, all to make the work easier.

She also installed African beds, thinking of producing differentiated quality.

She was further encouraged after her husband, Marcelo Morais, won first place in the Poços de Caldas specialty coffee quality contest for the 2013/2014 harvest and placed in the 2015 edition of the Cup of Excellence – Brazil Naturals .

This year, the couple again won 1st place in Poços de Caldas. Today they see that all of their hard work in improving the quality of their coffees has been well worth it.

 

Coffee processing system

1.         Only ripe coffee cherries are picked.

2.         Each day, coffee is transported from the fields to the patio.

3.         The coffee is washed and separated.

4.         The coffees are spread on the patios the same day they are washed

5.         During the first 4 days, the coffee is raked every 15 minutes if possible.

6.         After a few days, the coffee is piled together and covered at the end of the day to protect it from dew and rain.

7.         The coffee is stored at a maximum of 12% humidity.

8.         Lots are stored separately in rest boxes.

 

Concern about quality

1.         Only ripe coffee cherries are picked.

2.         The coffee is never left in the fields, as it could lose quality.

3.         All equipment, installations and patios are kept clean.

4.         Residue, dirt and old coffee are not allowed to mix with new coffee.

5.         The coffee is raked several times per day and is protected from dew and rain.

6.         Upon reaching the correct humidity level, the coffee is stored in a dry place.
