Description

History of the farm

This is a small farm, with an area of 3.4 ha, located in one of the highest regions in the city of Afonso Cláudio. When the property was acquired five years ago, it was entirely neglected pasture. Coffee of the variety Catucaí 785 was planted and proved to be well suited to the farm. After the first harvest, a sample was analyzed and a great potential was identified to produce specialty coffees, and thus achieve better prices. The producer has been working diligently to continuously enhance post-harvest processing to improve the product.

 

Coffee processing system

Processing is done with the wet system. First the coffee is selectively harvested. Then it goes to the washer and separator, which separates ripe cherries from floaters. After separation, the coffee is hulled and ripe beans are separated from unripe ones. Finally, the coffee goes to covered patios for slow drying. At first, the coffee is placed on the patios in thin layers.

  

Concern about quality

In order to produce a quality coffee, nature must be perfect and it is necessary to carry out the entire process very carefully, washing and pulping the coffee so that it doesn’t ferment in the bags. The equipment must be washed periodically, the drying patios need to be cleaned, new bags are needed for the processed coffee, and the humidity of the coffee must be correct before it is stored.
