History of the farm
Sítio Paciência belongs to Mr. João Vitor de Assis, who has always been committed to producing specialty coffees. The farm is run jointly by the entire family. The farm is part of a buffer area of the Serra do Brigadeiro State Park and features Australian cedar trees that provide better conditions for producing specialty coffees. The farm is very well located with easy access that facilitates the flow of production. The temperature in the region varies between 18 and 22°C and the soil is predominantly yellowish red and is very fertile. Coffee processing system The harvest is done manually, seeking to create jobs. After being picked, the coffee is washed and passes through the huller. The water used in this phase is completely recycled with the use of a decantation tank. Next, the beans are taken for drying on concrete patios and are separated according to quality. After drying the lots are kept separated in rest boxes and are stored on the
Concern about quality
The property applies all available knowledge for improving day by day the quality of its coffees, from crop treatment to harvest. The farm has seen evidence that shade-grown coffees present improved quality standards, as does selective harvesting. The producer cuts no corners regarding conservation of the environment.
