Description

History of the farm

Fazenda Gerais began in the 1990s when the João Roberto’s mother, who worked with coffee, gave him 27 hectares of land. He planted 7000 coffee trees on two hectares. In 2009 he married and has two daughters, Ana Luisa, 10, and Kamilly, 4. The family lives on the farm. All of the family’s income comes from coffee, vegetables and livestock.

Coffee processing system

The processing system changed with the goal of supplying quality. Harvesting became selective and processing was changed to pulped natural. The coffee goes directly from harvesting to the pulper, which removes the hull. Then the coffee goes to a concrete patio for drying. Drying ends when the beans reach around 11 to 12% humidity. The patio has a greenhouse to preserve the quality of the coffee. The farm has appropriate infrastructure for warehousing the coffee as well.

Concern about quality

Only ripe cherries are selectively picked, put into clean bags, and taken to the pulper with all proper care. After pulping, the coffee spread on a clean patio in a thin layer for the first two days. On the third day, the layer is thickened and continually raked until the coffee beans reach the desired humidity and uniformity. After the drying process, the coffee is stored on 40 cm high palates so there is not interference with its humidity.
