Description
History of the farm
The first coffee trees were planted in the region of Jaguara, a Quilombola community which gave the farm its name, during a trip with friends in 2001. It is located along the Royal Road near São João Del Rei, a city with rich history from the colonization of Brazil and gold mining, but with no coffee-growing tradition. Surrounded by smooth, high mountains, the coffee trees have adapted well since their planting.
Coffee processing system
Only beans at their peak ripeness were harvested selectively by hand. The fruits were placed in containers to rest and for the fermentation process to begin. They remained in these containers under strict control for temperature and light, later being spread on a polished concrete patio. The coffee was continually raked until the coffee reached a semi-dry state. Then the coffee was gathered and rested in a “volcano” until it reached 11.5% humidity. After drying, it was conditioned in a rest box for 40 days before being dehulled.
Concern about quality
The crop management, harvest and post-harvest procedures are carefully followed by the owner, who is also an agronomist engineer and researcher with a specialization in the production of specialty coffees.
