The farm Las Nubes, is located in the Sierra de la Concordia municipality, in the state of Chiapas, Cuxtepeques highway, two and a half hours from the ejido Nuevo Paraiso, the coffee producer Manuel Sánchez López, began working at the year of 1988. The varieties that he has been working on are Bourbon, Typica and Caturra. The height of his coffee plot is around 1700 meters above sea level. The rainy season is from May to September and the coffee harvest season begins in December and finishes in April. The coffee plantation has shade from trees such as chalum (Humiriastrum procerum), fruit trees such as mandarine, avocado and banana. At the beginning of his work in coffee he had only one hectare of coffee, he did not have a drying yard, a pulper, little by little he was making a drying yard so far he has 4 hectars. The process he uses for his beneficiary for his coffee to make the cherry coffee cut and in the afternoon he pulses it, let it ferment overnight until about 13 to 14 hours, then do the coffee washing, take out all the vain coffee finally take it to the drying yard which takes 5 to 6 days to dry. Mr. Manuel visualizes in the future that his coffee is one of the best in the Sierra de la Concordia area with high quality allowing him to be paid at a high price giving his family the best welfare conditions, says Mr. Manuel that your participation in the Cup of Excellence is really motivated to participate for the following year and that will serve to put more interest in the beneficiary in general. The producer belongs to ORGANIZACIÓN DE CAFETALEROS LA CONCORDIA, S.P.R. DE R.L., which has organic certification for NOP for USA market, CE for European market and LOP for Mexican market.
