Description

Sítio do Campo is located in the city of Carmo de Minas, in a region about 1200 meters above sea level. The farm is run nowadays by Rafael Dias Pereira, a fourth generation coffee producer whose family has been growing coffee for over 100 years, as well as being a reference in the production of specialty coffees.

Women work with harvesting and processing the coffees, which are processed at Fazenda Irmãs Pereira, which belongs to the family group. They mainly work on the selective harvest and on separating the beans on the African beds, but they also help at the farm headquarters.

Yellow Bourbon is the principal variety at the farm. The farm uses selective picking and the cherries are processed using both the dry and wet methods. In addition, the farm uses African beds and patios to dry the coffees and produce every better lots year after year.

 

 

The lot sent to the competition was prepared with all care that a specialty coffee requires. First, the degree of sweetness (Brix) was monitored to identify the ideal point of ripeness to pick the beans. At the right moment, the coffee was selectively harvested, separating the ripe cherries from the rest. At the processing center, the coffee was washed and the green cherries and floaters that had passed unnoticed during picking were separated. The selected beans were then pulped and taken to African beds for drying, where they remained for 25 days. The African beds are in a greenhouse which has special tiles with UV protection to ensure a more homogenous drying process and better quality in the cup.

All processes and steps performed from harvest to processing are done with maximal attention and care in order to achieve the best quality possible in the coffees.
