Cup of Excellence
Sítio Floresta, located in the countryside of Espírito Santo in the city of Castelo, is at an elevation of 700 to 950 meters. Its history began in 1912, when Alessandro Secondo Tozi, an Italian immigrant, arrived in the Castelo region and acquired a farm in the Caxixe Quente district, located in a valley surrounded by beautiful mountains.
After buying the property, he planted the first coffee crops. Over the years, the farm passed on to future generations. Today the 4th generation produces, runs, cares for and invests in quality, working in a system of familial agriculture, involving the entire family: father, mother, siblings and children. Each employs his own talents in the search for the perfect bean, for the best flavors and the dreamed-of practice of sustainable development.
The ripe cherries were harvested selectively, then washed, separating them from the floaters. Next the coffee was pulped, then dried in a greenhouse and stored for 30 days. Finally the coffee was gathered and classified.
Since 2000 the 4th generation of the family has concerned itself with improving the process, including planting, harvesting and post-harvest processing of the beans, aligning the work with the environment, mainly water resources. As such, there has been financial investment in irrigation and processing, reducing the use of water and reusing wastewater for fertilization. The entire process is closely monitored, day by day, to obtain the best results.
