My name is Daniel Cobilt Castro and I am the owner of Finca Cañada Fría which is located on the Huatusco - Xalapa highway nearby the community of Axocuapan, Veracruz. The rain is present during the hole year and is intesified from July to December. Cold is present in January. The coffee harvest season goes from December-January to the end of May-June. The coffee plantations have shade from "Dizpepe" trees, Higuerilla (Ricinus communis), Avocado Hass and Creole, Chinene (Persea schiedeana), brebilia, oak, guava, banana, and the fruits the earth give us we use for self-consumption. In this farm we take great care of the environment by not using herbicides, fungicides and any product that contaminates the land and the ecosystem, nor do we use hoes to avoid erosion of the soil due to is a canyon with very pronounced slopes. The varieties that we conserve, and we bet for their quality although they are very susceptible to rust are: creoles, bourbon, red caturra, yellow caturra, pacamara and we planted yellow bourbon since 3 year. We started 13 years ago with the production of speciality coffee and with the opportunity to participate in the Cup of Excellence Mexico 2012, as our first participation in a quality contest, thank God since then we have been in the 8 finals occupying various positions. During these years we have preserved a quality standard quite acceptable as well as we participated in Cup of Excellence also we had participated in other private events, with baristas in national barista’s competitions and brew bar competitions having until today very good results from first places and other positions, always between the top ten. For me, Cup of Excellence was the main gateway to the world of Specialty Coffee and thanks to the feedback of so many national and foreign people who have visited us, we have learned a lot from each one and we thank them for their teachings. We hope to continue in the future along the same line and be able to offer different profiles to our clients as up to today depending on the taste of each client. We appreciate the effort of the people and institutions that make this event possible and that thanks to the promotion and we can give to know our work.
