I am the third generation of producers of coffee in my family. My full time is dedicated to coffee. Since 7 years ago we began this family project to improve processes of coffee. We already are exporters.
My family and I produce and sell high-end coffees to specialty and renowned coffee shops in Mexico.
Our farm Zapotitla is located in the town of Zapotitla Municipality of Totutla, Veracruz. It is owned by Javier Debernardi Delavequia.
Some of the activities we do to produce specialty coffee is we source ripe cherries with the best possible nutrition, we do either natural, Honey or washed processess and we have all the traceability of each batch that we process
In the coffee chain, we have all the steps, from the seedbeds to make coffee plants, to a cafeteria where we see the result of all the work we do. At the farm we have variety Geisha, our natural shade is done by trees such as Ixpepes, Oaks and Chalahuites. For soil conservation we do not use herbicides, we have Micro batch experience, we carry out periodic evaluations in our own laboratory. In harvest season we harvest strictly ripe cherries, we do ecological and careful processess. Our harvest peak is february. For Drying we do sun and shade in raised beds and greenhouse. For storage we use bags and sacks.
It is worth mentioning that this is a family business and everyone is part of a certain part of the process.
